Allergens not listed on labels are the single largest cause in the USA reported during the second quarter, with a worrying 60%, up from 34% in the first quarter from the Food and Drug Administration (FDA).


Undeclared allergens have consistently been a top cause of USDA and FDA recalls for more than a year.

Proper labelling and declaring key allergens is directly related to food safety and needs priority from companies. HACCP is meant to identify risks from say allergens contaminating ingredients or equipment and so companies may need to go back to their HACCP plans to ensure the risk of allergens being undeclared are reduced.

The “Big 8” allergens – wheat, crustacean shellfish, eggs, fish, peanuts, milk, tree nuts and soybeans – account for 90% of all food allergy reactions.
